Cauli Rice is super easy to make and has way more nutritional value than rice. It’s a great side dish to serve with any meal. You can eat it with curry, add cilantro & lime and serve with mexican food, add to stuffed peppers to soak up the juice, and the list goes on!
What will you eat your cauli rice with?
1 head of cauliflower
1 tbs. butter
1/2 yellow onion, diced
Salt & pepper
Rice your cauliflower using one of the following methods:
In a Vitamix: Cut stem out of cauliflower & chop into florets. With the lid on and plug removed, turn the Vitamix to 5 & drop in florets on the spinning blade and let run until the cauliflower is in small, rice-sized pieces.
In a food processor: Cut stem out of cauliflower & chop into florets. Pulse until cauliflower is in small, rice-sized pieces.
With a cheese grater: Run a head of cauliflower up & down a cheese grater.
Add the butter & onion to a medium sized pot & saute for 2 minutes. Next add the riced cauliflower and let cook on medium low for 10 minutes, mixing occasionally so the bottom does not burn. Add salt & pepper to taste.
