Slow cookers are a wonderful thing. You can throw a bunch of delicious ingredients in, turn it on & walk away. When you come back you have a delicious, hot meal just waiting for you.

This beer chicken recipe is perfect for entertaining on Super Bowl Sunday. It takes 5 minutes to prep then the slow cooker does the rest of the work. The chicken gets so tender and stays nice & juicy. You can double or even triple the recipe (depending on how big your slow cooker is) and feed your favorite football fans.

Beer Chicken (adapted from Laa Loosh)

Beer Chicken - Primal Noms

Ingredients
3 lbs. boneless/skinless chicken thighs

1 1/2 tsp. salt

2 tsp. pepper

6 garlic cloves, crushed

1 1/2 tsp. oregano

1 bottle of gluten-free beer

Instructions
Salt & pepper the chicken thighs. Put half the chicken in the slow cooker in one layer & top with half the spices. Add the rest of the chicken on top and the remaining spices. Pour the bottle of beer in.

Set the slow cooker to high & cook for 2 1/2 hours. Turn the slow cooker to low, remove the lid & cook for another 2 1/2 hours.
