Bacon Wrapped Cheese Stuffed Chiles

Happy Valentine’s Day! This recipe is the perfect Valentine’s Day side dish because it’s full of things I love…to eat! Chiles (nom), cheese (nom nom) & bacon (om nom nom).

I’ve made this with both Anaheim chiles and jalapeños and they’re equally as tasty. You can adjust the heat by either keeping more seeds in for more heat or removing more seeds for less heat.

Bacon Wrapped Cheese Stuffed Chiles

Bacon Wrapped Cheese Stuffed Chiles - Primal Noms

Serves: 4

Ingredients
4 Anaheim chiles or 6 jalapeños

3 oz. cream cheese, softened

1/4 cup dry jack cheese, grated

1/4 cup cottage cheese

8-12 slices of bacon

Instructions
Preheat your oven to 400 degrees.

Remove the tops of the peppers & slice in half lengthwise. Remove the seeds & ribbing.

In a bowl, mix together all three cheeses.

Fill the inside of each chile half with the cheese stuffing.

Tightly wrap each stuffed chile half with one piece of bacon.

Cover a baking pan with parchment paper. Cook the chiles on a wire rack on top of the parchment paper for 15-20 minutes. At the end, crisp the bacon by broiling for an additional 5 minutes.

  1. I haven`t seen this done to bacon before. I normally dislike eating high on the hog, but I think I might try this one!
