Grain-free Banana Nut Bread

I recently received a comment from a reader named Ron & he mentioned he was looking for gluten-free flours to use for baking since he had a great banana bread recipe. Coincidentally, I made a loaf of Banana Nut Bread last night that my family really enjoys as a special treat so here it is!

Grain-Free Banana Nut Bread // Primal Noms

Makes: 1 loaf

2 very ripe bananas

4 eggs

1/2 butter or coconut oil, melted (plus a little more for greasing loaf pan)

1/4 coconut milk

1/4 cup almond butter

1/2 cup tapioca flour

1/2 cup coconut flour

1 tsp. baking soda

2 tsp. cinnamon

1 tsp. nutmeg

1/2 cup chopped walnuts

Preheat your oven to 325 degrees. Use some butter or coconut oil to grease up your loaf pan.

Mash up the bananas in a mixing bowl. Then add the eggs & beat together with the banana. Stir in the butter or coconut oil, coconut milk & almond butter and mix thoroughly.

In a separate bowl, mix together the flours, baking soda & spices, then stir into the wet ingredients.

Lastly, fold in the walnuts & pour batter into greased loaf pan.

Bake for about 1 hour, until a knife comes out of the center clean.

    A good place to purchase tapioca & coconut flours is in Asian markets. In St. Paul, MN. we have several with one outstanding for variety and size in the [Dragon Star Oriental Foods].
    Price are in-creatable reasonable. ex Sesame seeds for 7 oz @ $1.49 vs .25 oz in supermarket for $4. to $5 dollars. [Be sure to read the labels]
    This price comparison works for all they sell through out the whole store.
    Do stay away from the fish and sea food. It is usually badly contaminated in there Asian farm raised.
    Go fresh at a market you can trust. They sell all the parts of the animal.
