Cheesy Roasted Purple Potatoes

I absolutely love the color in purple potatoes & like to pick them up whenever I see them at the market. Nutrition-wise, potatoes are okay in moderation. Taste-wise, potatoes are awesome.

Purple potatoes are high in anthocyanin – the antioxidant found in purple, blue & red fruits & vegetables. When eating potatoes, it’s best to peel the skin off as that is where the potentially harmful glycoalkaloids are most concentrated.

This side dish is simple, easy & sure to please everyone – who doesn’t like potatoes? Raclette cheese is pretty pungent so you can always substitute with another semi-firm cheese if you’re not a believer that with cheese, the stinkier the better!

Cheesy Roasted Purple Potatoes - Primal Noms

Serves: 4

Ingredients
2 lbs. purple potatoes

3 garlic cloves, minced

1 tsp. basil

3/4 tsp. paprika

1 tbs. olive oil

Salt & pepper, to taste

3 1/2 oz. Raclette cheese, or other semi-firm cheese

Instructions
Preheat your oven to 400 degrees. Peel & cut the potatoes into uniform size and add to a medium size mixing bowl. Add the remaining ingredients & toss well to coat the potatoes.

Bake for 20 minutes then top with cheese & broil on low until bubbly & slightly golden – about 3 minutes.
